The white wine fermentation process sounds intriguing; however, grapes are not involved at all. Instead, cherries undergo the process described in detail below. This method is named after white wine fermentation because it imparts some characteristics of dry white wine, specifically ”Chardonnay,“ according to Cofinet. However, this is not a typical natural process, as it occurs in an anaerobic environment.
This coffee is initially placed on raised beds until its moisture content reaches 20%, following a 30-hour period of dry anaerobic fermentation. Next, it is stored in Grainpro bags for 80 hours, during which fermentation is driven by natural yeast. Finally, the coffee is dried on raised beds again until it achieves a moisture content of 10.5%.
